Traditional French Custard Recipe

Below is a simple, easy, and delicious recipe for Vanilla custard, a sweet dessert popularized in the Middle Ages and beloved by the French in the seventeenth century. Custards would have been enjoyed by nobility and the upper-class, but they would've been familiar to lower-class citizens as well.

Serves: 

Four 

Recipe: 

500ml milk

1/2 vanilla pod, cut in half lengthways

160g caster sugar

4 eggs

4 tablespoons plain flour

Directions: 

Combine milk and vanilla pod in a medium saucepan and bring to the boil over medium heat. Meanwhile, beat sugar with eggs in a bowl until mixture is creamy and a very pale yellow colour. Stir in flour; remove vanilla pod from saucepan and gradually add boiling milk to egg mixture, mixing well. Pour mixture into saucepan and cook over very low heat, stirring occasionally, until custard is thickened and ready. To top it off, try dusting the custard with cinnamon or nutmeg if you want a bit of spice, or slice up some fruit of your choice and mix it into the custard!
