The kids may wonder what special occasion you're celebrating when you serve up these gluten free Cherry Pistachio Chocolate Clusters.
Ingredients:
2 cups of Corn Biscuits cereal
½ cup dried cherries, coarsely chopped
½ cup chopped pistachios
2 cups mini chocolate chipsDirections:
Line a baking sheet with waxed paper. In a medium bowl, combine cereal, cherries and pistachios. Melt half of the chocolate in top of a double boiler over slightly simmering water. Make sure the water is not touching the top pan. Removing the double boiler from the heat and stir in the remaining chocolate. Carefully stir the cereal fruit mixture into the melted chocolate. Spoon out heaping, tablespoon sized clusters of the chocolate mixture onto the baking sheet and set 1" apart. Place in the refrigerator to set for 15 minutes. Store and serve at room temperature.
