Timothy is a spider, they'll curl up and die pretty quickly, but I imagine him shaking for a small time period before going completely still. As do most animals.

While I do still believe they would come after you, 100%. Seeing their new animations, I think it would hinder their balance. So, they'd probably stay low to the floor, lean against objects, use objects to propel them etc to get to the player in question. I also believe the more irritated or angry they get the more their head glows, leading to 0% glow when they are satisfied // happy and a very clear orange light when they are irritated // enraged. Also In these enraged moments heat is built up in the head of figure, leading the players demise all the more painful as they feel a burning sensation.

While it really depends on where Seek is shot, I think they are pretty useless if their eye is shot. Pretty much, without their eye, all regeneration stops, and tries to fix the eye. Seek would probably consume bullets if they hit their chest, but without the eye the scars/holes are visible and they can not transform back into a goop-like state. Leaving them waiting for a agonizing process of regeneration their eye, or being beaten into a state of undesirability depending on the players actions. I also believe once their eye is shot all body functions stop, leaving them to collapse and immobilize pretty quickly.
