Ode to Cheese

O how beautiful the cow's milk,
to give us something
so elaborate
so mystifying
so elegant
as the cheese.

Of the rinds,
it is not a sight to behold
but behold,
the tender middle,
the heart
melts the heart of the beholder.

The knife pierces,
revealing the gold,
the real treasure,
for few venture past the pungent odor
or the crumbling walls
to taste the diamonds
emeralds and pearls.

The squeak between the teeth
The soft impression on the tongue
The wheels of color
pop in the mouth.
Reds
Blues
Greens
like firecrackers
Exciting the senses,
beckoning all those who dare to enter.

So much is masked
yet so much is given,
Sitting on the palm of the hand
just waiting
Perched upon the highest of flavors
The sweet, the sour, the salt
opening the window
to new universes.

O Jack,
O Brie,
Your beauty astounds
even the very moon above.
May we ever remember thy name
in the great book above.
