This one is also the title page of the book. It's simply a diamond ring through the small area of a drinking glass that doesn't refract the diamond, with a red background.
The aperture, and shutter speed can be anything that looks good. The ISO should always be kept as low as the light conditions allow. If you want to see more of the glass, set the camera to a smaller aperture. If you find your eye drawn to the diamond, it's because of a technique called "leading lines" (because photographers are very creative ;) ), this is simply lines leading to the subject of the photo, in this case, the refractions in the light cause arrow-looking spires to point to the diamond.
