Main Ingredients:
4 Chicken thighs/breasts with skin
Cooking Oil
Handful of green onions (or scallions) sliced thinly
2 Cloves of garlic minced
2 Aleppo peppers, thinly sliced (or any kind of large chili pepper). If weak to spice, use bell peppers like capsicums, thinly sliced
Half a yellow/white onion diced rough
6 Swiss brown mushrooms roughly sliced
2 Potatoes diced
2 Carrots, peeled and roll-cut
Sauce Ingredients:
1 tsp Sesame oil
Half Cup rice wine (alternatives include white wine, store-bought chicken stock)
Half Cup light soy sauce
2 tbsp sweet dark soy sauce (optional)
2 tbsp brown sugar
Pinky-sized ginger finely grated
1 Clove of garlic minced
Fresh thyme (optional)
Mix everything together in a small bowl, dry ingredients first and then wet.
Steps:
1. Pan-sear the chicken (skin-side down first, flip once the color develops) until golden brown and skin is slightly crisp. Season the chicken while it's cooking. Salt. Cracked black pepper. Remove when done.
2. Using the same, unwashed pan, add the diced onions. Cook it down till soft, translucent. Add minced garlic and sliced chilies, cook till onions are brown.
3. Add the chicken back into the pan
4. Add sauce
5. Add potatoes and carrots.
6. Turn the heat down, pop a lid on, let simmer for ten to fifteen.
7. Garnish with green onions.
8. Impress.

Swap out the rice wine or chicken broth with a cup of creamy coconut milk for a subtle sweetness and stunning fragrance, creating a rich sauce perfect for spooning over rice. To make it thai-style, leave out the mushrooms and carrots. Instead, add 3 tbsp of thai green curry paste and squeeze some lime juice in before simmering the dish. Also, swap out the yellow onion for red onion.
