okay just to clear things up, its not my first time ever baking lol. its just my first time baking a cake this year.
i made a carrot cake, probably my fav (unpopular opinion).
so i was on a videocall with my friend who is au pairing in pittsburgh, and then we watched the bachelorette together. and i was craving carrot cake for weeks now...
anyways i took my phone, opened up my recipe and then started baking while talking to her. we were on the call for four hours.
ugh, it was so good.
recipe :
ingredients :
a cup of cake flour
2 teaspoons baking soda
2 teaspoons of cinnamon
a teaspoon of salt
a cup of brown sugar
a cup of oil
4 eggs
2 cups of grated carrots
1/2 cup of chopped pecan nuts
frosting :
a cup icing sugar
a teaspoon of vanilla essence
230g of cream cheese (a tub)
if you want you can add a bit of butter
pecans on top
method :
sift the dry ingredients without the sugar.
whisk the eggs and sugar in a bowl and mix oil and carrots in.
add to dry ingredients.
bake in oven 180°C / 365°F for 40 minutes or until the cake is done.
