Do you want to cook for a good family dinner? Mothers usually go to the supermarket and choose all the best ingredients she needs for her menu. Let's say she'll cook fried chicken. Doesn't she take the choice cuts so all the members of the family will get a fair share?

It's a good thing we have choice cuts now. People can get the exact part they want and the exact number they need. This reality continues to amaze me personally.

When I was a little girl, my mom cooked chicken once a week. It was usually on a Saturday when all the kids were at home and we can all help in dressing the chicken. My father helped too. He boiled the water in a big hot pot and slit the chicken's throat. Once all the chicken blood was drained, he would hold the whole chicken by the feet and dipped it in the boiling pot. Then, we would all pick the chicken feathers to dress it clean. It was a family bonding for all of us.

We prepared all the vegetables. We peeled them and sliced them, abd washed them clean, prepared the greens and mother did the cooking. I remembered each member had a special part of the chicken. That part was our choice cut.

Today, choice cuts have a different meaning. You may get all the drumsticks you need for fried chicken. All the family members will get almost the same size and shape. That's our modern choice cuts. Which choice cuts do you like?
