The phrase you used "그냥 괜찮아" doesn't imply "just okay" in the most natural way because 괜찮아 is more towards a positive side while is 평범해 more neutral! (It means normal/mediocre)

This is a great example of using 그냥 because it also captures the meaning and context of the word perfectly! Imagine someone asking you "Why don't you want to go to school" you can respond with this to say "I just don't want to go to school." If you want to make it more casual, you can say "그냥 학교 안 가고 싶어요!" (You can take out the 에 in this context).
