Ingredients
1 cup of rice
2 tbsp oil
200g mushrooms
3 frozen peppers
400g kidney beans
2 tbsp ketchup
100g spinach
Pinch of chilli
SeasoningsPROCEDURE
Put 2 tbsp of oil into a shallow pan, chop your mushrooms and toss them inside the pan, bring to a high heat, slice the pepper finely and add that too and the seasonings, and give all a good stir, cook for 5mins, stirring occasionally to disturb it so it doesn't stick and burn.
Drain and rinse the kidney beans, and add them to a pan, add the ketchup, the spinach and half cup of water and give it all a stir.
Cook for further 10mins, reducing the sauce to a thick and sticky one before serving.In another pot, add water and cup of rice and a pinch of salt, bring to boil, then parboiled and return it to cook until soft. Serve with your sauce.
