Jack likes to slowly kill his target over the course of a few days to few weeks. He'll remove the organs that people can live without first before any others that he wants. The slow progress of removal is purely for his enjoyment. He likes to stalk his target and make them paranoid.
He likes organs from health young people but will eat anyone if hungry enough. If the target can be carried away without much trouble then Jack will do so and eat basically the whole body in the safety of his home.
Jack has favourite parts of the body but it's not the kidneys. It also depends on the person because each person tastes different to him.
If a person smokes or is an alcoholic, he won't eat their lungs or liver unless he really is hungry.
