200gr cold butter (grated on a medium or a large side of the grater)
1/2 cup sugar
1/2 tsp of baking soda
pinch of salt
2 cups of all purpose flour
Additional melted butter and sugar for shaping
Instructions:
Combine everything. Knead until the dough is soft. Cover with plastic wrap and leave in the fridge for 30 min.
Preheat the oven to 350 F. Roll the dough to 1/4 inch height and cut with a circular mold. Brush the circles with melted butter and press them into sugar. Fold once into a semicircle. Fold again into a into triangle. Move onto a cookie sheet leaving space between the cookies to expand. Slightly cut the triangle's widest side into thirds so they look more like duck feet.*
Bake for 15-25 minutes until golden brown. For a softer cookie, let rest for 10 minutes after removing from the oven and transfer immediately to an airtight container. For a crumblier and harder cookies, take from the oven and let cool. These are best tasting when they are warm right from the oven.
