Ingredients:
2 lbs (1 kg) chicken breast, cut in chunks
1/4 cup grated red onion
1 tbsp grated ginger
3 cloves minced garlic
1 cup soy sauce
3/4 cup brown sugar
1 tbsp sesame oil
2 tbsp rice wine vinegar
1/2 tsp gochujang (or to taste)
1 tbsp cornstarch
1 tbsp cold water
Directions:
Cut chicken into chunks and place in a bowl.
Whisk together onion, ginger, garlic, soy sauce, brown sugar, sesame oil, vinegar, and gochujang. Pour half (approximately 1 cup) over the chicken. Put in the refrigerator and marinade for at least 2 hours.
Take the rest of the marinade and put in a small saucepan. Bring to a boil, stirring often, and then reduce heat and let simmer for 5 minutes.
Mix the cornstarch and water into a slurry. Add to the marinade and cook for another 3-4 minutes. Remove from heat and allow to cool.
Remove chicken from the marinade and place in air fryer basket (can also be pan fried in a little bit of oil).
Air fry at 400 F for 8 minutes. *You can brush with BBQ sauce halfway through cooking
Serve warm with rice.
