One Pan Roast Chicken & Vegetables

Ingredients:

1 pounds red potatoes (about 3 medium), cut into 1 inch pieces

1 pound sweet potatoes, cut into 1 inch pieces

1 medium onion, quartered

3 garlic cloves

2 tablespoons olive oil

1 teaspoon dried rosemary

1/2 teaspoon paprika

2 chicken breasts (about 1 pound)


Instructions:

1) Preheat oven to 425°F. Line a baking pan with parchment paper if desired.

2) Cut all the vegetables

3) Place the chicken breasts on a large baking sheet. 

4) Lightly brush the chicken with 1 tbsp olive oil.   

5) Sprinkle the chicken with paprika, rosemary, and 1/4 teaspoon salt 

6) Place the potatoes, onion, and garlic in a large bowl. Toss with 1 tbsp olive oil.  

7) Arrange the vegetables around the chicken.

8) Bake for 15 minutes, then stir the potatoes

9) Roast for an additional 15 minutes or until vegetables are tender and the chicken reaches 165°F.
