150 gr Gruyère (or any melting cheese of similar saltiness level)
100 gr of olives (I used calamata & black olives)
150 gr ham or any already cooked protein of your liking (I used prosciutto cotto, a boiled cooked ham)
2/3 large capsicum
zest of half small lemon
generous amount of black pepper
salt (about half a teaspoon.. depends on the saltiness of your olives and cheese, and ham)
1-2 tsp sugar
250gr flour
1.5 teaspoons of baking powder
Instructions:
Preheat oven to 180 C (350 F). Wisk all wet ingredients together until well mixed. Add cheese, olives, ham, pepper, salt, lemon zest, and sugar. Add flour and baking powder. Then mix with a spatula just until everything starts to combine. Don't overmix the dough! Transfer to the loaf pan lined with parchment paper. Bake at for about 45 minutes to an hour. Check doneness by using a toothpick - the toothpick should be dry.
