Ingredients: Apple
2 medium apples, peeled, chopped finely
1 teaspoon caster sugar
2 tablespoons water
1 teaspoon pure icing sugar
Pastry:
1¼ cups rice flour
¼ cup cornflour
¼ soya flour
1/3 cup caster sugar
150g cold butter, chopped coarsely
2 tablespoons cold water

Step 1: Preheat the oven to 200° fan forced. Grease and line oven tray with baking paper.
Step 2: Make gluten free pastry. Process flours, sugar and butter until crumbly. Add enough of the water to make ingredients come together. Knead dough gently and lightly on floured surface until smooth.
Step 3: Combine apple, sugar and the water in small saucepan; bring to the boil. Reduce heat; simmer, covered, about 5 minutes until apple is tender. Cool.
Step 4: Roll pastry between sheets of baking paper until ½cm thick; cut out 18x8cm rounds from pastry. Drop heaped teaspoons of apple mixture into centre of each round; fold to enclose filling, pinching edges to seal.
Step 5: Place turnovers on tray. Bake, in oven, about 15 minutes; cool on trays. Serve dusted with icing sugar.
