CURRANTS BUNS

INGREDIENTS:
-500 g flour
-50 g margarine
-50 g granulated sugar
-200 ml milk
-1/2 teaspoon salt
-2 eggs
-75 g currants
-20 g yeast
-1 teaspoon castor sugar

DIRECTIONS:
-Sieve the warmed flour and salt into a warmed bowl and rub in the fat.
-Cream the yeast and sugar. Beat the eggs and add the milk. Mix with the yeast.
-Make a well in the centre of the dry ingredients and pour the liquid into it.Mix and beat with the hand for about 10 minutes until the dough leaves the sides of the basin clean.
-Turn on to a floured board and knead in the currants and granulated sugar lightly.
-Cut into 16 portions,shape each into a smooth ball. Place on a greased sheet and 'prove' in a warm place for 15-20 minutes.
-Bake in a hot oven. When baked brush with milk and sugar. Put the buns back into the oven for 1 minute with the heat turned off,to dry the glaze.
