Khichdi, the complete one pot meal, mostly famous in North India, gives a perfect combination of nutrients and taste. This easy to cook recipe provides a quick option  when you are running out of time. Prepared by mixing rice and dal, its an amazing dish when added with flavor of spices. 

Let's start with the ingredients required... (for two servings)

One medium onion (chopped).

Garlic cloves - 3-4 (Peeled and chopped).

Green chili - 1-2 (chopped).

Oil - 2 Tablespoon.

Hing- a pinch.

Cumin seeds - Half tablespoon.

Coriander powder - 1/2 tablespoon.

Turmeric powder - 1/3 tablespoon. 

Salt - According to taste.

1/4 Cauliflower - cut into small pieces.

Potato - 1 (Cut into small pieces).

Green peas - 4 tablespoon.

Tomato - 1 medium (chopped). 

Rice - 1/2 cup (washed).

Masoor dal ( Red lintels) - 1/2 cup (washed).



Step 1: Put a frying pan on the stove and pour the oil into it.

Step 2: When the oil gets heated, add hing and jeera.

Step 3: Add the onion and fry it till it turns golden brown.

Step 4: Add the Cauliflower, green peas, tomatoes and potatoes and stir for about 4-5 minutes.

Step 5: Add the garlic pieces and the green chilies. 

Step 6: Add the spices i.e. turmeric powder and coriander powder and stir for 3-5 minutes.

Step 7: Add rice and dal into the pan and stir for 2 minutes.

The dish now looks something like this....

Now it's time to transfer this to a pressure cooker.

Step 8: We have used half a cup of rice and half a cup of dal, which comes to a total of one cup.

So, I add 5 cups of water and salt to taste to this and put it in a cooker.

Step 9: After one whistle, slow down the flame of the stove and let it cook for another 4 minutes and switch off the stove.

Step 10: Let the cooker cool on its own.

Your dish is ready to eat .

Serve it by adding a spoon of ghee and you can use Raita and Pickle as side dish.
