Undyne is a Grindylow, a water creature with tentacles. Don't think of Harry Potter here guys, we're talking actual mythology here. Grindylows have tentacles (Undyne's come out of her back) which they use to drag lost children under water. Obviously, Undyne uses her tentacles to her advantage, using them to help her fight. Her personality hasn't changed any, but she is even less of a fan of her armor because it'd constraining to her tentacles. That's about it, I guess.
