Ingredients:1/2 cup raspberry jam1/2 cup half-and-half3 eggs 1 teaspoon of sugar
Directions:
1. Whisk together the half-and-half and eggs in a bowl. Stir in the jam. Once all ingredients are well-combined, pour into a saucepan and cook over medium-low heat, stirring constantly, until the sauce thickens. Do not walk away from the stove, or the sauce may split.
2. Remove the foam from the surface of the sauce with a skimmer. Cook the sauce, stirring constantly, for another 3 minutes, then take off the heat and stir. Let the sauce rest for five minutes, then serve!
3. If wanting to reach the desired thickness and taste, add 1 teaspoon of sugar to the raspberry sauce, and stir to combine for an extra layer of sweetness.2. Cocoa Mousse

Directions:
1. Mix together the sugar, water, and butter in a saucepan. Add the vanilla and milk, and whisk until smooth. Add the egg, and mix well.
2. Whisk sugar, water, butter, and vanilla until smooth. Gradually whisk in milk, then egg, then flour, then baking powder and salt. In the bowl of a stand mixer, combine the sugar and water. Bring the mixture to a boil and boil for several minutes, until it is a golden-brown colour.
3. Transfer the pudding to a bowl and let it cool for at least 45 minutes. Just before serving, fold in the lemon juice, and stir with a fork to fluff the top of the pudding. Pour the mixture into the saucepan, and cook over low heat, stirring constantly, until the pudding has thickened. Remove from heat, and stir well to combine.
4. Add the mixture to the saucepan with the other ingredients, and whip over medium heat until thickened. Transfer everything to a baking dish, and cook in the oven for 15 minutes. Allow to cool for at least 45 minutes, then refrigerate for several hours or overnight.
