Tapioca Parmesan Cheese Bites

INGREDIENTS:

1 large egg

1/2 cup milk

1/4 cup olive or canola oil

1 cup tapioca flour 

1/2 tsp salt

1/4 cup grated cheddar cheese 

1/4 cup grated parmesan cheese


HOW TO PREPARE:

Preheat oven to 375°F. Combine egg, milk, oil, tapioca flour, and salt in a big bowl and beat until smooth.
Add cheeses and beat for another minute.
Pour batter into a non-stick or lightly greased mini muffin tin filling each well about 3/4 full.
Bake for 13-15 minutes until golden.
Remove from oven and cool for a few minutes before removing from pan. Best served when warm. Enjoy!
