Eyeless Jack's way of sight is very complicated. He doesn't have eyes but he is a demon therefore he can use his senses to develop sight in his 'mind's eye'. So he technically can see but he lost his memory, like many blinding people do, for color. EJ also using a trick very similar to echo location by sensing the things around him and identifying them.
