Sort of healthy, sort of not, these super-cute and tasty fridge cakes are perfect for kids parties

Sort of healthy, sort of not, these super-cute and tasty fridge cakes are perfect for kids parties. Even BIG kids will love 'em.

Ingredients

● 300g of dark chocolate, broken into smaller chunks.
 
● 100g diced butter.

● 140g of Golden Syrup.

● 1tsp of vanilla extract.

● 200g of digestive biscuit, roughly chopped or broken into smaller pieces.

● 100g of sultana's or raisin's.

● 85g of Rice Krispies.

● 50g of white chocolate, melted.

● 100-140g of mini eggs, (these are optional, but they look great).


Method

●Line a 20 x 30cm tin with baking parchment.

● Melt the dark chocolate, butter and Golden Syrup in a bowl over a pan of simmering water. Stir occasionally until smooth.

● Add the vanilla, biscuits, sultanas (or raisins) Rice Krispies, mix well until everything is coated.


● Pour the mixture into the tin and flatten.

● Add the mini eggs and put in the fridge until set.

● When set, melt the white chocolate and drizzle over and wait to set again.

● Cut into chunks and enjoy!

Preparation: 15 minutes.

Cooking: 5 minutes (plus time to chill).

Serves: 16-20 pieces.
