Solitary Stew

What you need:

- 4 tbsp of cornstarch

- 1 1/2 cups of milk

- 3 tbsp of parmesan cheese

- half of a red onion, minced

- 4 diced small yellow potatoes

- 1 diced red bell pepper

- 1 diced green bell pepper

- 1 diced yellow bell pepper

- 1 tbsp of  canola oil

- 1 pound of diced chicken leg meat

- 3 cups of veggie broth

- saucepan

- whisk

- large pot

- soup ladle

How to make:

1. In the saucepan, whisk together cornstarch and a quarter of the milk until it dissolves. Next, add the remaining milk and bring to a boil. After that, take off the heat and add cheese until it melts and the mixture combines, then set aside. 

2. Add canola oil to a large soup pot over high heat. Once it begins to smoke, add the diced chicken meat and season with salt and pepper. Stir the chicken as it cooks until lightly brown, then add diced onions and cook another couple minutes. Next, add veggie broth and bring to a boil. After, add potatoes and diced peppers. 

3. Cover the pot and let it cook on low heat for 20-30 minutes or until chicken and potatoes are cooked through. Whisk in the mixture from the saucepan and bring to a boil, and once it's thick, season the stew to taste with salt and pepper. 

4. Ladle into bowls, and serve hot!
