I ended up using a names wheel.
These are the first half of the mate sets

Hermione - blaise
Ron - cho
Ginny -seamus
fred - Cedric
George - remus

I've decided that for this series in going to make Hermione and luna sisters, and split the weasleys.
Here are the new sibling groups.

Weasleys-
Bill
Fred
George
Charlie

Prewitts-
Ron
Ginny
Percy

Lestrange-
Luna
Hermione

And the parents-
Weasley - Molly and Arthur ( illegal love potion that has now worn off)
Prewitt - Molly and mystery man ( will be revealed later)
Lestrange - Bellatrix and Sebastian

Who I now need to mate -
Bill, Charlie and percy need mates. Should I mate them with their partners in the books, or someone new?
