The greatest reason Gabriel began to turn from Fiona (and sanity) is because f the way other's actions made him feel. He felt rejected and betrayed when Fiona ran away. She literally left him. Gabriel knew Fiona pretty well, and so he understood how stubborn and feisty she was. He knew nobody would be able to take her by sheer force, she would have to be willing to go. He started doubting himself, and losing the will to live. The only thing that kept him going was the opportunity to destroy the thing that was casing him so much pain. And in the (first) end(ing), he won. He broke Fiona, reducing The Ember Queen to ashes.
