ABOUT:
This cake is like a spice bread (middle Eastern style) but on a sweeter side. Traditionally from Scotland, date and walnut loaf is still enjoyed in many tea rooms around the country. Date bread was first recorded as a recipe in 1939, and now today is used to make holidays like Christmas and Thanksgiving a little more festive. It is often made with treacle or tea to give it a dark brown colour.
Recipe Cook Time: 45 mins, preparation time: 25 mins.
INGREDIENTS:
1) 1 cup dates, pitted and chopped.
2) ¼ cup margarine.
3) 1 ¾ cups self raising flour.
4) 1 cup dark brown sugar.
5) 1 cup boiling water.
6) 1 teaspoon baking soda.
7) 2 teaspoon vanilla extract.
8) 1 cup walnuts (optional).
METHOD:
1) Preheat oven to 400 degrees F.
2) Grease and flour a 9x5 inch loaf pan.
3) In a large bowl, combine dates, walnut, brown sugar, margarine and boiling water. Let stand 15 minutes.
4) Stir in flour, soda and vanilla.
5) Pour batter into prepared pan.
6) Bake in the preheated oven for 45 minutes. Allow to cool.
SUGGESTION:
You can add walnuts in the batter.
Cake freezes well so you can bake more than one batch at a time.
