Recipe Cook Time: 40 Minutes

INGREDIENTS:

1) 1 pumpkin or butternut squash, peeled and diced.

2) 1 yellow onion, chopped.

3) 300 ml lentils, boiled.

4) 3 cloves of garlic, crushed.

5) 500 ml chopped canned tomatoes (prefer fresh Tomatoes).

6) 1/2 teaspoon turmeric.

7) 1/2 teaspoon cumin powder.

8) 1/2 teaspoon sambal oelek (or more if you prefer it spicy).

9) 1 teaspoon paprika powder.

10 ) 1/2 teaspoon sugar.

11) 400 ml vegetable stock.

12) 3-4 sprigs of chopped parsley.

METHOD:

2) Next, heat oil in a heavy bottomed pan or a Tagine.

3) Add in the onions and garlic and saute until the onions are soft and tender
