Biko Recipe

Ingredients:

* 4 cups of malagkit or sticky rice

* 3 cups of water

* 4 cups of brown sugar

* 8 cups of coconut milk (best when fresh)

* 1 teaspoon of salt

Directions:

1.) Cook malagkit or sticky rice in a rice cooker or pot with less water so as not to cook it completely.

2.) In another pot, pour in 7 cups of coconut milk along with brown sugar and salt. Set it to low-heat and continuously stir the mixture until it thickens. 

3.) As soon as the malagkit is cooked, carefully add it into the thick coconut milk and brown sugar mixture.

4.) Continuously stir over low to medium heat until the liquid lessens. Set to low heat. Add the remaining 1 cup of coconut milk and occasionally stir until it reaches the dryness desired. 

Tip: Be sure not to overcook and too dry to retain the ideal taste and texture. 

5.) Serve on top of banana leaf. 

Option: Put latik  or caramel syrup on top.
