Please, please, don't be OOC. Please, please, don't change the ships around, unless, you know, you're actually doing a fanfiction about a non-canon ship (Pernico, Jercy, Jeyna, etc)... if you're going to make a Percabeth fanfiction, don't make them like Edward and Bella or something.
I've read so many fanfictions that portray ships how they totally aren't. Percy and Annabeth aren't going to fall in love automatically in some AU. Percy and Annabeth didn't fall in love automatically in PJO. So don't make them seem so hopelessly in love they forget to be friends... they love eachother, but I think half of the reason they're such a good couple is because they're best friends.

Annabeth snuggled into Percy's chest. He smelled like Old Spice. His eyes were shimmering green orbs. She loved him so much. Percy said, "You're so amazing, Annabeth." Annabeth giggled and blushed. "I love you Seaweed Brain." Then they made out.
I'm sorry, but I doubt a Percy-and-Annabeth-date would happen like that... and I kind of doubt Percy would smell like old spice either xD
