Okay, lemme get this straight. If a story is tagged "OOC" or it says so in the description, I'm fine. I used to see that on fanfiction.net, and then I knew that the characters were going to be different, and I could read it knowing that.

OOC stands for "Out of character" (and sometimes, "Out of context). It was originally used in roleplay and sometimes, theater. But I use it to describe when characters are acting nothing like themselves in a fanfiction, rp, or headcanon.

An example of this is Persassy, because, as I said in the "Persassy" chapter, Percy is not a sassy white girl who loves The Little Mermaid. Another example is when people act like Piper is a girly girl (the whole cool thing about her is that, despite being a daughter of Aphrodite, she's a fierce tomboy. I have nothing against her being a girly girl, however, I just find it interesting that she broke the mold). One more example is when Percy sudddenly cheats on Annabeth for some other blonde, or the other way around.

I can tell you that Percy suddenly saying he never loved Annabeth is not something that would probably happen. This being said, I'm fine with Pernico, Jercy, etc. fanfictions, especially if they're well written, because they make sense a little bit- Nico likes Percy, Percy and Jason are close friends, and so on and so forth. But when writers take it to extremes- for example, Pertemis- it annoys me. Now, I'm not trying to bash on any ships or fanfictions, I'm just saying that if the characters don't act like themselves, you are basically just taking their identity, sticking it on another person, and making fluff between this identity thief and the other characters.
