Ingredients:
4-6 medium potatoes
1/3 cup sour cream
2 tbsp butter
Four tbsp. Chopped chives or scallions
Salt and pepper, to tasteDirections:
1. Peel the potatoes and cut them into one inch cubes
2. Put them in a pot over medium height heat with salted water and leave them in for 30-45 minutes, or until the potatoes are tender.
3. When they are done, drain the water, and put the pan back on the stove or on a countertop
4. Add the butter and sour cream. Using a masher or a fork, mash the potatoes, sour cream, and butte together until combined
5. Add the chives or scallions into the potatoes with salt and pepper
6. Enjoy them warm!! Serves 3-5 people

A couple things:
- if you don't have sour cream, you can substitute for cream cheese
- if you don't have scallions or chives, they are still good
- the potatoes will probably need a lot of salt
- make sure to salt the water you put the potatoes in so they have flavor right from the beginning
- if you don't have all medium potatoes, just use enough to fill about 2-2 1/2 cups
