Ingredients:
Six medium eggs
Two tbsp milk
1/4 cup grated cheddar cheese
1 cup raw spinach (optional)
1/4-1/2 cup cherry tomatoes (any kind of tomatoes work, optional)
1/4 cup of salsa (for the end, optional)
2 tbsp chopped scallions
Muffin pan
Cooking sprayDirections:
1. Preheat the oven to 350 degrees
2. In a medium bowl, crack the eggs and whisk. Add the milk and cheese, and combine
3. In a small pan, cook the spinach until soft. Cut the tomatoes in halves
4. Spray the muffin pan with the cooking oil. Put about 1/6 of the mixture ( one egg a muffin hole, if that makes sense).
5. Add the cherry tomatoes ( 1-3 halves each) and a little of the spinach. With a spoon, gently mix the egg mixture
6. Carefully put the muffin pan in the oven for about 10-15 minutes, or until cooked through.
7. Top with salsa and the scallions. Enjoy!!
Serves 3-6

- you can just make it without the spinach and/or the tomatoes, and have it plain. You can also add chopped ham to it of you don't like veggies
- you can freeze these after putting them in a large bag. They can go for 2-3 weeks in the freezer
- these are great for to-go breakfasts (make them the night before ) or for a family meal when you or your parents don't want to cook eggs in fifteen different pots :)
