You may have noticed Sierra bakes Brian his favorite cookies at least once per year—if you're a s'mores fan, get in here. Thanks to my amazing friend _iheartcoffee_ who wanted to know what was in these little drops of heaven (Too far?).
I like to make mine at Christmas along with Nick's favorite cookies (peanut butter blossoms).
Hot Cocoa Cookies (developed from a Hershey's recipe)
Servings: 36 cookies
INGREDIENTS
1 cup butter, softened
1 cup white sugar
½ cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
2 cups all purpose flour
¾ cup cocoa powder
1 teaspoon baking soda
½ teaspoon salt
Marshmallows (puffed or mini)
Hershey's kissesPREPARATION
1. Preheat oven to 350ºF (180ºC).2. In a medium bowl, cream butter and both sugars until light and creamy. Add egg and vanilla and mix until incorporated, scraping down the sides.
3. In another bowl, whisk flour, cocoa powder, baking soda, and salt to combine and add to the creamed mixture on low speed until a dough forms.
4. Cover the cookie dough and place in the freezer to rapidly chill for 10 minutes.
5. Roll dough into 36 balls (they will look better than my photo above if you follow this).
6. Bake for 9-10 minutes, until cookie edges are set.
7. Remove from oven, and cool for 2 minutes.
8. Top each center of the cookie with one Hershey's kiss and marshmallows in your own haphazard or perfectly planned pattern and broil under low setting until marshmallows brown.
9. Give to your favorite Pena boy, then steal it back and scarf it in front of him.
