AFRICAN PEPPER SOUP- GOAT MEAT

Ingredients

* 2 teaspoon of uziza leaves
* 1 pound of goat meat
* 2 teaspoon of crayfish
* 1 tablespoon of pepper soup spice
* 1 teaspoon of red chilli flakes
* 1 teaspoon of ginger powder
* Salt to taste
* 1 small onion
* 1 scotch bonnet pepper (de-seed and minced)
* 1 seasoning cube
* 4 cups of water

* Cut the goat meat into cutlets

* Cut the goat meat into cutlets. Then rinse thoroughly, transfer the meat into the pot, add salt, seasoning cube, habanero pepper and half of an onion and cook for 30mins.

* Add the pepper soup spice, red chilli flakes, ginger powder, the remaining grated onion and crayfish. Leave it to cook for another 10mins.

* Stir in the uziza leaves and let it simmer for another 5mins. Serve hot with yam, rice, bread and more.
