I get how it can make absolutely no sense to some people, so I'll try to explain. Sans goes to Grillby's multiple times a day. Even if they didn't know each other until then, if you go to the same place everyday, you're bound to get to know people. Also, that massive tab Sans has. I don't know about you, but a tab like that is not something a business person would just let a random stranger have. Grillby must know Sans at least well enough for him to continue serving him despite the tab.
Again, this is another one that the fandom probably pulled me into. But, I see this ship as adorable.
