Y'all want a way to use left over egg whites? I found an egg white mousse recipe!
Well, it was a chocolate satin recipes from Epicurious but then I clicked away only once to a different tab and came back and suddenly nO mOrE fReE rEcIpE so I copied the ingredients and found a chocolate mousse recipe and used those steps but for the ingredients listed from the epicurious one. It came out soooo good! Especially if you have leftover chocolate glaze/icing and creme patissiere from another recipe and layer them with the mousse! Here's the recipe I did—for free! You're welcome.
6.6 ounces (300 g) 70% bittersweet chocolate, finely chopped (but I used chocolate chips, not chopped)
1/4 teaspoon fine sea salt
1/2 teaspoon pure vanilla extract
1 1/3 cups heavy cream
2 large egg whites at room temperature
2/3 cup confectioners' sugar
- make sure whites stay cold
- melt chocolate until smooth
- in chilled bowl, beat cream until stiff peaks
- mix eggs with highest speed until frothy.
- add sugar to eggs whites 1 tablespoon at a time until stiff peaks form
- add egg whites into the cream and fold until partially incorporated. about 10 folds.
- once the chocolate is cooled to lukewarm, add in a quarter of the egg white-cream mixture and fold into well incorporated.
- pour the chocolate mixture into the rest of the egg whites.
- to help with lumps, smear the spatula across the surface but I didn't have many lumps so I just left them. made no difference. if you need to fold more, just be gentle but 12 folds should do the trick.
-Add vanilla and sea salt and mix until just combined
- chill overnight but it already seemed pretty set after I was done making it.
