We get to Hilary & Bret's house

Once we all get settled in , Hilary asks me to help her out in the kitchen while the guys watch the Premier to the ball drop I give Hil a hand with making Coquito & Bellini

I gather all the ingredients for Coquito while she gets the Bellini prepared in the flutes for us all

Ingredients

Cream of coconut
Coconut milk
Evaporated milk
Rum
Vanilla extract
Cinnamon & nutmeg
Salt Just a touch for balance- totally optional.
Cinnamon sticks I used these for bottling the coquito

After I bottled it up I put it in the fridge for 4 hours to chill and thicken definitely makes the flavor settle more quickly

Hilary may I ask what's in the Bellini never had it before

Ohh sure it is .. 4 medium ripe peaches , plus a few peach slices for garnish on the flutes if you desire them of course then just 1 bottle Prosecco, chilled and ready to sip on (she says with a wink handing me over a glass)
