Jack actually doesn't like kidneys. Because he was sacrificed to Chernobog (the god of death, darkness, and destruction) and didn't die due to a mishap in the ritual, he now has to eat organs to stay in the mortal plane. If he doesn't then he will be forced to be tortured by Chernobog for the rest of eternity.
