After the war, the jinx on the Defense Against the Dark Arts position was lifted meaning that one teacher could stay in the position for more than one year.
After the jinx was lifted, my headcanon is that Harry was the DADA teacher for a couple years before becoming an Auror. When Harry left, more wizards and witches more more eager to apply for the DADA job and the future students got a teacher with a proper education and teaching techniques.
McGonogall was most likely the Headmistress after the war and most likely spent more time on background checks when hiring more teachers so that the students could get a proper education.
