Italians get triggered easily when it comes to our food.

It's not surprising at all if we consider that as part of our culture, we don't eat to nourish our bodies; we eat to nourish our souls.

If there's a rule we stand by is "quality over quantity". And it applies to food as well. What makes our dishes so good is the freshness of the ingredients and our traditionalist mindsets.

Personally, I don't mind if foreigners enjoy fettuccine Alfredo or Hawaiian pizza in their home countries. But I do get triggered when, while visiting Italy, they expect us to "adjust" our local traditional recipes to their taste.

I'll do an example: Neapolitan Pizza.

There's a real set of codified rules, orally transmitted by Neapolitan's generation of pizzamaker, passed down from father to son called "The International Regulation". These rules concern the ingredients, the edge (which must be swollen), and the shape (roundish with a diameter max 35 cm). They even concern the condiments; the peeled tomato crushed by hand doesn't have to look too dense but chunky. The buffalo mozzarella (chopped in slices) or the fior di latte (chopped into strips) have to be spread uniformly on the pizza. The extra virgin olive oil is poured with a spiral motion. The fresh basil leaves are just put on the condiments. And so much more!

On a Saturday evening, I was enjoying a dinner out with my boyfriend when suddenly the quiet atmosphere was interrupted by the complaints of a foreign family who was on vacation. The dad was yelling at the waitress because their kids wanted special pizzas that were not on the menu. In particular, one of them wanted a Bacon Cheddar Pizza, which are not really your typical Italian ingredients. While the other wanted chicken pizza. Heresy for Italians.

Their point was that a country with as many tourists as Italy should be open-minded and ready to satisfy every single customer. The pizzamaker tried to explain his reasons and even offered them free pizza just so they would realize how genuine and authentic it is. However, the man refused and made his family stand up and search for another pizzeria. It was absurd and I don't even need to explain why.
