Oof, I can try

-If he broke into your house trying to kill you, and noticed you were avoiding eye contact, he'd use it to his advantage
-But when you guys get together he's much more respectful of it
-He tries not to look you in the eye too much and tries to talk to you while your doing something so you can focus on that instead
-He sometimes likes to hold you close while talking to you or when his/your back is turned
-Sometimes he does forget about your phobia, so when he notices you looking away from him a little too much he relaxes and either holds you close or turns his body away from you
-If you ever get into an argument he might try to force you to make eye contact but apologizes later
-Overall doesn't affect a lot of things but he still loves you all the same
