Ingredients
# 1 cup (185g) pitted dates
# 1 tsp bicarbonate of soda
# 90g butter
# half cup (115g) firmly packed sugar
# 2 eggs lightly beaten
# 1tsp vanilla essence
# one and a half cups (185g) self raising flour
For the sauce
# 1 cup sugar
# 1 cup cream
# 90g butter
# half tsp vanilla essence
METHOD
# preheat the oven to modebate 180°c. Brush a deep 18cm square cake tin with melted butter and line the base with baking paper. Put the chopped dates and soda in a heat proof container and add 1 cup boiling water. Stir and leave for 15mins
# using electric beaters beat the butter and sugar until light and creamy. Beat in the eggs gradually. Add the vanilla essence. Fold in half of the sifted flour, then half of the date mixture.
# stir in the remaining flour and dates mixing well. Pour into the prepared tin and bake for 50 mins or when the top pops back up when pressed gently.
# Leave the pudding to cool for 10 mins before turning out. Cut into wages and Serve warm with the sauce.
# to make sauce put the sugar, cream, butter and vanilla in a pan and bring to the boil while stirring. Reduce the heat and simmer for 5mins.
