Ingredients
# 2 egg whites
# 100g grated coconut
# 120g castor sugar
METHOD
# whisk egg whites and sugar over pot of hot boiling water until the mixture is thick and very stiff.
# lightly fold in the grated coconut. The mixture should be of a smooth texture.
# drop spoonfuls on a greased baking sheet. Bake in a very slow oven for 45 minutes without Browning until firm.
