Ingredients
# 1 kg cold cooked meat
# 3 oz butter
# 2 tbsp fruit sauce
# salt and pepper
# pinch of ground nutmeg
METHOD
# after removing skin and gristle from the meat, pass it twice through a mincer.
# pound the meat with half the butter, sauce and seasonings.
# press into small pots and smoothen the top with a palette knife.
# pour the remaining butter ones top of each pot and leave to get cold.
