Ingredients

# half tsp cream of tartar

# 6 egg whites

# 300g caster sugar

# touch of pink food coloring

# baking paper

# unsweetened cream

# berries

# mint leave

METHOD

# for the meringue: whip 6 egg whites, add cream of tartar, and add your sugar little at a time. Patience is needed. It's ready when it doubles and it's  fluffy and white.

# add a touch of food coloring and stir gently.

# make a circle on the baking paper, scoop some meringue into it and press it out a little till it fills out the little circle. Make 2

# bake for 1hr 20min at 120°

# when cooked it is stiff.

# place the first one in a stand, put cream in it then swirl it to even it out.

# place your varieties of berries then add berry sauce (optional).

# add more cream the place the next meringue, repeat as for above.

# garnish with mint leave.
