Ingredients

# peeled potatoes - 400g

# butter - 40g

# onion - half bulb

# white stock - 1 ltr

# white pepper - 1 tsp

# black pepper - half tsp

# seasoning - to taste

# parsley - 30g

METHOD

# melt the butter in a pot.

# add the chopped onions and sweat for 2 mins

# add the peeled, washed and diced potatoes

# season and cook for at least 30mins

# blend or pass through a conical strainer.

# reboil and correct the seasoning and consistency.

# sprinkle the chopped parsley

# serve hot with fried or toasted crouton separately.
