Imagine:
After all the quests Percy and Annabeth finish highschool.
Then they travel seeing any sight the two wanted to see in the world and not while they are at war. Under the protection of the gods they were monster free.
Many months later they hung around camp training younger demigods and making more improvements. They spent a month with Annabeths family the two as a couple felt with any issue, even family. Then they came back and stayed with Sally after a visit to Camp Jupiter.
After traveling and spending time at home and camp the new school year is starting. They took a 'gap year' although Annabeth was still looking up any architecture designs to add to the New Olympus. That year they went to Camp Jupiter to go to college.
There was a small 'apartment' building there where they moved in together.
